Michael Jameson’s (‘95) Journey to Opening His Restaurant

Michael Jameson has worked across the restaurant industry since graduating in 1995, but he and his partner, Derek, opened Dos Amigos Tacos in 2021.

The fast and casual taco spot currently has two locations; one in Delray Beach and a brand-new location in Wellington. The restaurant offers a variety of delicious fresh tacos along with other classic Mexican dishes.

While Jameson had already mastered the cooking aspect of hospitality by obtaining his culinary degree, he studied Hospitality Management at Lynn to learn the business aspects of the restaurant industry. Post-graduation, he worked with many different restaurant corporations of varying sizes. However, in 2020, all 18 of his company’s restaurants were shut down in a day due to COVID-19.

“It was the first time in my life that I didn’t have a set job,” said Jameson. “It was a little nerve-racking being at the age that I was and with a family and kids in college.”

However, later into the pandemic, Jameson was approached by his now partner, Derek, with the concept for Dos Amigos. He agreed to get involved and they began getting ready to open the restaurant.

Since opening Dos Amigos Tacos in late 2021, Jameson has continued to apply the skills he learned at Lynn years ago to his everyday work life, whether they be regarding business, law or even just people skills.

“Lynn brought out a lot of the socializing and networking skills that a lot of other universities don’t have since Lynn is so small,” said Jameson. “You’re not a number there and you’re able to get hands-on experience in what you want to do at the end of your program.”

Not only did Jameson make many important professional connections while at Lynn, but he also made strong personal connections. He met his wife in an accounting class and they bonded over the fact that they were both upperclassmen in their first year at Lynn. Shortly after she finished school, the couple got married. Their daughter, Riley Jameson, followed in her parents’ footsteps and is now in her senior year at Lynn.

The Jamesons maintain their Lynn ties and even hosted a food truck on campus during the 2012 presidential debate. Looking ahead, they hope to open a Boca Raton location.

“We’d love to find our third spot over in Boca and become a part of that community again,” said Jameson.
